If you've spent years working in commercial kitchens, you've likely already developed the practical skills covered in a formal cookery qualification. RPL for Commercial Cookery is a process that allows your hands-on experience, training and workplace evidence to be assessed against nationally recognised standards, rather than requiring you to sit through classes covering skills you already use every day.

This pathway suits cooks, line chefs, kitchen hands who've moved into cooking roles, and anyone who has built genuine culinary skills through paid or unpaid kitchen work. It's designed for people who can demonstrate what they know how to do, not just people who've completed formal study.

What Is RPL for Commercial Cookery?

RPL for Commercial Cookery is a way of having your existing kitchen skills and experience formally assessed against the requirements of a recognised cookery qualification. Instead of attending classes to relearn tasks you already perform confidently on the job, you compile evidence of your real-world experience and have it reviewed by an RTO assessor.

How the RPL Process Works

  1. Tell us about your experience — we start with a simple conversation about your work history, roles and responsibilities.
  2. Prepare your evidence — we help you gather and organise documents and examples that demonstrate your skills.
  3. Connect with an RTO — your evidence is submitted to a partner Registered Training Organisation for formal assessment.
  4. Receive your outcome — the RTO advises whether your skills meet the required standard, and what (if anything) is still needed.

Evidence You May Need

RPL assessment is conducted by an RTO. The following types of evidence are commonly discussed during RPL support consultations.

Evidence You'll Typically Need

  • Photo identification
  • Current resume or CV outlining your kitchen work history
  • Employer reference letters confirming your cooking duties and experience
  • Payslips, rosters, or employment contracts from kitchen roles
  • Any relevant certificates or training records you already hold (e.g. food safety supervisor certificates)
  • Your Unique Student Identifier (USI) — you can create or find yours at usi.gov.au
  • Photos and videos of you performing kitchen tasks, where possible, to help demonstrate practical skills
